Peanut Butter & Choc Chunk Cookies

1 cup shortening
1 cup sugar
1 cup brown sugar
1 tsp. vanilla
2 eggs
1 cup smooth peanut butter
3 cups flour
2 tsp. baking soda
dash salt
1 lb. Haig's chocolate, chopped into chunks (approx. 2 cups chunks)

Heat oven to 375° F.  In a large mixing bowl, cream butter and sugars.  Mix in vanilla and eggs.  Stir in peanut butter.

In a separate bowl, whisk together flour, baking soda and salt.  Stir into peanut butter mixture.  Add Haig's chocolate chunks.

Drop by tablespoonful onto cookie sheets and bake 9 to 11 minutes or until lightly browned.  Cool on baking sheet for 2 minutes then remove to cooling rack.  Makes 3 dozen sensational cookies.
